Diabetes cakes should ideally not contain refined sugar, as it is easily absorbed and leads to spikes in blood sugar, which aggravates the disease and makes treatment difficult. In addition, this type of cake should also contain a high amount of fiber, as it helps to delay and regulate the absorption of carbohydrates, allowing blood sugar levels to remain balanced.
Although they are more suitable for people with diabetes, these cakes should not be eaten frequently because, even if they have a low amount of carbohydrates, they can alter sugar levels if consumed regularly. Thus, these recipes are only for special occasions.
Plum and oat cake
This recipe has no refined sugar and, in addition, it has lots of fiber, oats and fresh plum, which help to regulate blood sugar levels. Thus, it is a great option to use at diabetic children's birthday parties.
Ingredients
- 2 eggs; 1 cup of whole wheat flour; 1 cup of fine rolled oats; 1 tablespoon of light margarine; 1 cup of skim milk; 1 shallow cup of powdered sweetener; 1 spoon (of coffee) of baking powder, 2 fresh plums.
Method of preparation
Beat the eggs, sweetener and margarine in a mixer, or blender, and then gradually mix together the oats, flour and milk. After the dough is well mixed, add the baking powder and plums in small pieces. Mix again and place in a greased pan, leaving to cook in the oven at about 180º for approximately 25 minutes.
After the cake is ready, you can sprinkle cinnamon powder, because it is also good for diabetes.
Orange and almond cake with filling
This cake does not contain refined sugar and has a low amount of carbohydrates, with only 8 grams per slice, and can be used at birthday parties for those suffering from diabetes.
Ingredients
- 1 orange; 2 tablespoons of orange zest; 6 eggs; 250 g of almond flour; 1 tablespoon of baking powder; ¼ of a tablespoon of salt4 tablespoons of salt sweetener; 1 tablespoon of vanilla extract; 115 g of cream cheese; 125 ml of unsweetened natural yogurt.
Method of preparation
Cut the orange into 4 pieces and remove the seeds. Then place in a blender and blend until a homogeneous mixture is obtained. Add eggs, almond flour, yeast, sweetener, vanilla and salt and beat again until everything is well mixed. Finally, divide the mixture into two well-greased forms and bake at 180º C for approximately 25 minutes.
To make the filling, mix the cream cheese with the yogurt and then add the orange zest and another tablespoon of sweetener.
When the cake is cold, cut the top of each cake to make it more balanced and assemble the layers, placing the filling between each layer of cake.
Diet chocolate brownie
This version of the popular chocolate brownie, besides being delicious, contains very little sugar, avoiding the common blood sugar spikes of other cakes. In addition, as it has no milk or gluten-free foods, it can also be consumed by people with celiac disease or lactose intolerance.
Ingredients
- 75 g unsweetened cocoa powder; 75 g buckwheat flour; 75 g brown rice flour; 1 teaspoon baking powder; 1 teaspoon xanthan gum¼ teaspoon) salt200 g chocolate with more than 70% cocoa, cut into small pieces; 225 g of agave syrup; 2 teaspoons of vanilla extract; 150 g of mashed banana; 150 g of apple juice no sugar.
Method of preparation
Preheat the oven to 180º C and line a square pan with a thin layer of butter. Then, sift the cocoa powder, flour, yeast, xanthan gum and salt into a container and stir to mix.
Heat the chocolate that is cut into pieces in a water bath, together with the agave and then add the vanilla extract. Place this mixture over the dry ingredients and mix well until smooth.
Finally, mix the banana and apple juice and put the mixture in the pan. Bake in the oven for about 20 to 30 minutes or until you can prick a fork without leaving it dirty.
